				<content:encoded><![CDATA[<p><a href="http://www.mojacoffee.com/wp-content/uploads/2013/01/notes.jpg"><img class="alignright  wp-image-563" alt="notes" src="http://www.mojacoffee.com/wp-content/uploads/2013/01/notes-300x108.jpg" width="180" height="65" /></a>Costa Rican coffee is one of our <a href="http://www.mojacoffee.com/coffee/">staple coffees</a> here at Moja Coffee. Our Costa Rican offering comes from Hacienda La Amistad, which gives the coffee its nickname of &#8220;La Amistad&#8221; coffee. As far as our roast of this coffee goes, it leans towards the citric end of this region’s taste profiles: a silky-smooth body and bright acidity reminiscent of Granny Smith apples.</p>
<p>We just got a new crop of Costa Rican coffee in at Moja, freshly harvested, and wanted to share with you some more background on the region where it is grown.</p>

<p>The beans come from a region in Costa Rica that borders on Hacienda La Amistad, one of the largest private nature reserves in Central America, located near the Panamanian border. The <a href="https://www.facebook.com/haciendalaamistad">Estate</a> has been around for over 70 years, producing quality coffee that has been supporting over 22 families. The estate was bought out in the &#8217;80s by the Montero family who began to grow the coffee organically, way before the organic craze we have before us today.</p>
<p>The estate grows the coffee at 1,200~1,500 meters above sea level, which is prime range for coffee. The estate itself is over 23,000 acres in size with the nature reserve set between each of the coffee farms. This allows for clean water to be used in all processing facilities, as well as supplies drinking water for all the families that grow the coffee. They use this water to generate power and run the machinery of their on-site mills. La Amistad is also a UNESCO World Heritage Site due to its biodiversity. <p>We recently got in some Ethiopia Kaffa Forest beans, a bean grown on the southwestern side of Ethiopia. Kaffa is the original home of the name for coffee; Kaffa, coffee &#8211; see it? Coffee plants grow wild in the mountain rainforests in countless varieties in this region. The Kaffa Forest beans are grown under one of the last remaining forests in Ethiopia.</p>
<p><strong>Cupping notes</strong>: We found it has a delicious brightness that is really intense in flavour, and has a light sweetness to it that doesn&#8217;t linger around. It would be great paired with something light, such as a Cranberry Scone, and slurped to really bring out that vibrant brightness. It will definitely wake your taste buds up!</p>

<p>We are currently featuring a wonderful Cuba Caracolillo at Moja. We&#8217;ve roasted the Cuba twice now, experimenting with the flavour of it and have had some really interesting results.</p>
<p>Cuba Caracolillo is a peaberry noted for its delicate sweetness with a light acidity and Sage aroma. When we first roasted it, we thought it was good, but that it lacked something distinctive. In our second roast, Andrew thought we should go a bit lighter, to bring out the acidity, and elongate the roast time. Varying the roast time and temperature and also the rest time, we had a completely different experience in our next cupping. Everyone was floored by the end result and we think you will be too!</p>

The big sale only happens twice a year and is a great time to stock up for the holidays. <li>$10/bag 400g coffee</li>
<li>Purchase any $20 dollar gift card, and we will add $5 bucks to the total</li>
<li>Cappuccinos are $2</li>
<li>Drip coffee is $1</li>
<li>Many prizes to be won!</li>

<p>Doors open at <strong>7:30am</strong> sharp. To avoid line-ups at the bar, we will be opening the back of the shop for <em>cash only</em> sales of coffee beans. Head to the warehouse door on the North side of the building.</p>
